Chakki Atta
Atta is Indian whole wheat flour that is used to make flatbreads like chapati, roti, paratha, and puri. Fresh Atta was traditionally made at home by grinding wheat in a homemade stone grinder known as Chakki. Because atta has a high fiber content due to the high bran level, as well as a high gluten content, its doughs may be robust and rolled out extremely thin.
Atta is made up of all sections of the wheat grain. It retains the bran, which provides fiber and other nutrients (vitamins B, iron, magnesium, and phytochemicals), the endosperm, which contains glucose, and the germ, which includes vitamin E and polyunsaturated fat. Atta is said to be healthier than Maida, which has just endosperm and is consequently high in carbohydrates.
